Recipe: Vegetable Tian

Ingredients

  • 2 zucchinis

  • 2 small eggplants

  • 2 small onions

  • 5 red peppers

  • 1 small squash

  • 1 tablespoon dried oregano

  • 1 tablespoon honey

  • ¼ glass balsamic vinegar

  • ¼ glass soy sauce

  • 1 tablespoon ketchup

  • 1 teaspoon garlic powder

  • 2 tablespoons olive oil

Preparation

This recipe is rather easy to make. For the dish to look prettier, I recommend choosing vegetables of similar sizes. Slice all the vegetables, except the squash which is diced. Choose an adequate dish and pack a slice of zucchini, a slice of onion, a slice of pepper, and a slice of eggplant around the dish, repeating until the dish is full. In the middle, place the squash cubes.

In a bowl, mix together the honey, oregano, balsamic vinegar, soy sauce, ketchup, garlic powder and olive oil. Brush all the vegetables with olive oil and pour the rest of the marinade in the dish. Bake 45 minutes at 180°C and serve as a side dish with meat or fish for example. Bon appétit!
